- 1 egg, beaten (for egg wash)
- Powdered sugar, for dusting
- 2 cups whole milk
- 1 cup granulated sugar
- 4 large egg yolks
- ¼ cup cornstarch
- ¼ cup unsalted butter
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 tablespoon light corn syrup
- ½ teaspoon vanilla extract
- Start by placing the thawed puff pastry sheets on a floured surface. Gently roll them out to eliminate any creases.
- Cut the dough into rectangles, approximately 3x4 inches, and arrange them on a baking sheet lined with parchment paper.
- Brush the top of each rectangle with the beaten egg and dust lightly with powdered sugar.
- Bake in a preheated oven at 400°F (200°C) for 15-20 minutes, or until the pastries are puffed and golden. Once baked, let them cool completely on a wire rack.
- In a medium saucepan, warm the milk over medium heat until it just starts to simmer, then remove it from the heat.
- Whisk the cornflour, egg yolks, and granulated sugar together in another basin until thoroughly blended.

- Once the puff pastry and pastry cream are completely cooled, spread a layer of pastry cream on one puff pastry rectangle.
- Top with another puff pastry rectangle and repeat the layers until you have three layers of pastry cream and four layers of puff pastry.
- Place a last layer of puff pastry on top to finish.
- Chill the assembled Napoleon cake in the refrigerator for at least 1 hour to allow the layers to set and flavors to meld.
- Slice and serve chilled. Dust with additional powdered sugar if desired.
