Ingredients


- 1 cup whole wheat flour


- 1/2 cup jowar (sorghum) flour

- 1/2 cup rice flour


- 1/4 cup besan (chickpea flour)


- 1 medium onion, finely chopped


- 1-2 green chilies, finely chopped (adjust to taste)


- 1/4 cup fresh coriander leaves, chopped


- 1/2 teaspoon turmeric powder


- 1 teaspoon red chili powder


- 1 teaspoon cumin seeds


- Salt to taste


- Water as needed


- Ghee or oil for cooking


Instructions


1. Prepare the Dough


In a large mixing bowl, combine all the flours: whole wheat, jowar, bajra, rice, and besan. Add the chopped onion, green chilies, coriander leaves, turmeric powder, red chili powder, cumin seeds, and salt. Mix well.


2. Add Water


Gradually add water to the mixture and knead it into a soft dough. The dough should be pliable but not too sticky. Let it rest for about 15-20 minutes.


3. Shape the Thalipeeth


Divide the dough into equal portions. Take one portion and flatten it between your palms. Place the dough on a clean surface or a piece of parchment paper. Using your fingers, shape it into a round pancake, about 1/4 inch thick. Make a small hole in the center to help it cook evenly.


4. Cook the Thalipeeth


Heat a tava (griddle) or non-stick pan over medium heat. Add a little ghee or oil. Once hot, carefully place the shaped thalipeeth on the pan. Cook for about 3-4 minutes on one side until golden brown, then flip and cook the other side, adding more ghee or oil as needed.


5. Serve


Once cooked, remove the thalipeeth from the pan and serve hot with yogurt, pickles, or any chutney of your choice.
