• 120 ml (½ cup) chilled coffee (I used light roast filter coffee)
• 120 ml (½ cup) plant-based milk or any milk you prefer
• 1 tsp vanilla extract
• 1 tbsp almond butter
• 1 tbsp cacao powder
• 1.5 – 2 tbsp maple syrup (or another natural sweetener of your choice)
• 4 tbsp (¼ cup) chia seeds
Instructions
1. Start by measuring all your ingredients and placing them in a mixing bowl. Add the coffee, milk, vanilla extract, almond butter, cacao powder, and maple syrup. Stir everything until well combined.
2. Pour the mixture into an airtight container or jar. Then, add the chia seeds and cover it. Shake the container well so the chia seeds are evenly distributed throughout the liquid.
3. Place the container in the fridge and let it chill overnight, or at least for 6 hours, to give the chia seeds time to absorb the liquid and form a pudding-like texture.
4. When you're ready to enjoy, take it out and add any toppings you like. I love adding cacao nibs and roasted almonds, but feel free to customize it to your taste!
